Berry Sweet is a perfect summer cup of coffee produced by our dear friend from Quindio, Colombia, Sebastian Ramirez! This coffee is a caturra varietal that is taken through a 120 hour anaerobic fermentation in whole cherries before being thermally shocked from 18*C to 40*C. Post this thermal shock, the coffee is entered into a secondary anaerobic fermentation for about 72 hours where berries are introduced to ferment along side. After this, drying is done in a greenhouse style for around 20 days to ensure control. This coffee is quite subtile but so tasty and pleasant. Unlike many of our other co ferments, this coffee is not as loud, and is an amazing first co ferment, if you have yet to experience one!
