The shores of Lake Atitlan occupy a diverse eco system, and are home to many coffee producers that make up the Coop Tinamit. The Tinamit Toliman Agricultural Cooperative (Coop Tinamit) are a group of farmers in the Atitlan region of Guatemala making fantastic work. Founded in 2016, this coop became official in 2018 and has recently branched from washed coffees to natural lots and honey process lots, such as the one we have brought onto our menu. San Lucas farmers send their coffees to the coop’s processing for same day production. After this, the drying mill which the coop oversees, takes the coffee and does their thing. The Coop checks cherries to ensure all are ripe and will process same day to sort out any defects. After depulping, the coffee is set out on a patio to dry for 5-6 days then be bagged and moved to the states. With notes of candy, lemon, peach and cherry, this coffee is incredibly sweet and reminds us of many natural coffees.
