Augusto Ortega’s Sidra is a beautiful and exceptional presentation of what a Sidra varietal can represent. This is MCR’s first ever Sidra lot, and with the growing popularity in this variety, we could not be more excited. Sidra varietals are a known as a rare and highly specialized arabica coffee variety, and are most commonly known as a hybrid between red bourbon and typica.
Augusto Sidra is grown on his farm, Finca Asturias, is located in the Huila region of Colombia. At an altitude of roughly 1750 meters above sea level, this coffee is grown on the higher end of the elevation range in which coffee thrives. Augusto founded this farm in 1985, and has had his fair share of ups and downs over the years. Yet, he has made a name for himself and has brought to market many exceptional and truly stellar lots.
With this particular lot, Augusto is picking cherries every 21 days to ensure ripeness, throughout the harvest season. Floated, hand sorted for defects, and then dried on raised beds, coffee is then de-pulped and fermented for 36 hours in a dry fermentation method inside of oak tanks. With a quad cycle rinse, and 10 hours of draining, the coffee is then dried in shade to ensure an even, thorough and consistent dry for 480 hours. The coffee is then milled and processed before being sent state side.
This lot reminds us of pineapple juice in its’ acidity, as well as hints of lime and stone fruit (specifically apricot). Due to this coffees delicacy and our roasting philosophy, we do recommend this lot for pour over to showcase. Nevertheless, this offering is exceptional on espresso and cold brew as well as any other brew method!
