Rich, full and beautiful, we introduce you to our newest decaf offering, the Meseta De Popayan. Coming from the Cauca region of Colombia this is our first EA Decaf to be on our menu and we could not be more excited for this offering. Filled with vibrant flavors of milk and chocolate, this coffee has nice undertones of hazelnut and dark cherry which glaze the palate with each sip. For those of you who do not know the world of decaf, EA or Ethyl Acetate is a clean and natural process that holds the coffee’s flavors in while decaffeinating the bean. While this process occurs naturally in many other fruits, the process swells the beans and then soaks them to remove the caffeine in an ethyl acetate water solution. Ethyl Acetate bond with caffeine molecules which move through the cell membranes of the coffee beans and make their way out due to the polarity of both caffeine and ethyl acetate molecules. Many decaffeinating processes are harsh and harmful for human consumption, as well as the coffee itself, which is why we are excited to use an EA process coffee as it is a naturally occurring process, like Swiss Water Process. Nevertheless, we are also able to cut our carbon consumption with this process, as EA processed coffees can occur and do occur at origin, whereas Swiss Water Process is a facility where green coffee is shipped to for processing then again, shipped to a warehouse for storage, followed by another shipping to the roaster. Although we loved our previous decaf coffees, we do feel the integrity of the green coffee is compromised at a lower level with EA Process, and more flavor and natural coffee experience is retained at a greater amount.
