Recipe 1: The Standard Flat Bottom Brewer Recipe

While it is no secret that we at Mae love experimenting and have found ourselves enjoying more modern takes on filter, espresso and cold brew, there is something to be said for a traditional styled pour over. Therefore, I wanted to make a post about my standard, classic Kalita Wave 185 recipe; yet, this will be applicable with slight changes to any or most flat bottom brewers. Enjoy :)

Brewer: Kalita Wave 185

Dose: 25g of ground coffee

Yield: 400ml of liquid coffee

Ratio: 1:16 (1 part ground coffee to 16 parts water)

Water Temp: 198*F / 92-93*C

Grind Size: Fine-Medium

Time: 3:15 minutes

Number of Pours: 7

Steps:

  1. Set your water temp. Once to temp, pre-wet your filter and discard of water in decanter.

  2. Grind coffee to desired grind size then pour into basket.

  3. 0:00 - Begin first pour and start timer. First pour will be a 1:3 ratio, therefore this will be a 75ml pour. Pour in circular motions, starting in the middle and working out. Pour steady, but create good agitation. Make sure to not pour at the edge of coffee bed, as you may have water that will bypass through the sides of the coffee.

  4. 0:30 - Second pour should be 110ml, making your total pour at 185ml. Continue pouring in circular motions, and continue good agitation.

  5. 1:15 - Third pour should be 115ml, making the total 300ml. Continue pouring in circular motion, yet be a bit more gentle, pouring closer to the basket and limiting coffee agitation.

  6. 2:00 - Now starts our “pulses.” Pour ever 15 seconds, 25ml. We call this recipe the “quarters” recipe, because the ending pours will be pouring a quarter of 100ml ever quarter of a minute. Pour gentle and slow hitting the full bed in circular motions but ensure minimal agitation. Our goal is to not pour too aggressive.

  7. 2:15 - Pour another 25ml.

  8. 2:30 - Pour another 25ml.

  9. 2:45 - Pour your final 25ml. Let coffee drain.

  10. End time should be from 3-3:30 but shoot for 3:15. Remove basket, discard of coffee and filter, stir or swirl your decanter, pour into cup(s) and enjoy.

This cup profile will give you a balanced, yet full body coffee experience. This recipe does great as a starting place. Yet, it will be loud, and from here it will give you a good bench mark as you go off to explore more brew methods, or recipes for each coffee.
