Basic? Maybe, but we love basic over here at MCR! The Finca Fatima Veracruz is a tasty, palatable and clean extended fermented washed coffee from Mexico. Like many washed coffees from Mexico, this one is absolutely stellar and sure to bring you back for more. Yet, where the Veracruz takes a turn is in its’ process. Being an extended fermentation means that this coffee comes intact with the cherry still on the bean. As it arrives to the wet mill, it is weighed then analyzed before washing. The drying period is extended in a consistent and steady temperature controlled environment to allow for longer and greater shelf life in the coffee’s green stage. While this coffee is “basic,” if you will, it still packs a punch with sweet notes mixed in with its full and clean texture.
